1. Preheat oven to 200 degrees.
2. Microwave squash in covered bowl, stirring occasionally, until tender, 12-14 minutes; drain well. Process squash, 1 tablespoon ghee, water, salt, and cayenne in food processor until smooth, about 30 seconds, scraping down sides of bowl as needed; transfer to an oven-safe serving bowl, cover, and place in oven to keep warm until ready to serve.
Stephenie: This meal was delicious! I'd definitely make this again. My only change is to reduce the cayenne in the puree, and add a pinch of cinnamon.
