Chicken Zucchini Fritters

1. Spiralize or shred zucchini. Chop cilantro.

2. Mix all ingredients, except oil, in a medium bowl

3. Add oil to a large nonstick frying pan. Scoop about 1 1/2 inch sized balls to the pan, using a small scoop or rounded spoon. Press with a spatula to flatten into a fritter. Cook 3-4 minutes on medium heat until lightly browned. Repeat on the other side.

Notes

Stephenie: The cumin flavor takes over the patty, though the texture is nice. I would recommend that you experiment with other flavors. Cooking them in bacon grease helps.
