1. Thinly slice zucchini in rounds. Preheat oven to 375 degrees.
2. Place zucchini slices in a baking dish coated with cooking spray. Sprinkle with garlic and optional Parmesan cheese. Drizzle with olive oil. Bake for 20-25 minutes, until the zucchini browns.
Stephenie: If not Paleo, add fresh grated parmesan. This is also good with feta. Also optionally, broil at for the last minute to brown the cheese.
