Roasted Brussels Sprouts

1. Adjust oven rack to upper-middle position and heat oven to 450 degrees. Line a cookie sheet with aluminum foil. In the pan, place the Brussels sprouts cut side down. Sprinkle with olive oil, water, salt, and pepper. Mix lightly with your hands.

2. Cover the baking sheet tightly with aluminum foil and roast for 10 minutes.

3. Remove foil and toss the Brussels sprouts gently and place them cut side up. Return them to the oven and cook until Brussels sprouts are well browned and tender, 10 to 15 minutes. Some small pieces will be dark and crispy. Make sure to taste them!

Stephenie: These worked out really well. I really like the steam and then roast method. This also works well in the toaster oven.
