1. Gently shape beef into four 1/2-inch-thick patties and press shallow divot in center of each. Do not overwork the meat or the burgers will become tough. Salt and pepper one side of the burgers.

2. Heat oil in 12-inch nonstick skillet over medium-high heat until just smoking. Add the burgers, salt and pepper side down. Sprinkle the top side with more salt and pepper, and cook until well browned and meat registers 120 to 125 degrees (for medium-rare), 3 to 4 minutes per side. Transfer burgers to plate and tent loosely with aluminum foil until ready to serve.

Notes

Stephenie: This is a good basic burger recipe. Make sure you use quality ground beef to appreciate the flavor. I like making this with bacon, caramelized onions, sautéed mushrooms, and an over-medium egg. Cook the bacon first and reserve the bacon fat. Add 1 TBsp fat and cook onions until browned and remove with a slotted spoon. Add more oil and cook the mushrooms until plump and browning. Then cook the burgers and finally the egg.

Paleo: For the fat, you can use meat fat, tallow, ghee, or if you're not eating Paleo, vegetable oil. For paleo meals, roast portabella mushrooms to use for buns.
