Garlic Sweet Potato Fries

1. Preheat oven to 350F. Peel and cut sweet potatoes into 1/4 inch thick fries; place on a large baking sheet lined with aluminum foil.

2. Melt half the butter and drizzle over sweet potatoes. Mix together the garlic powder, black pepper and paprika and sprinkle over the fries. Using clean hands, gently mix the fries, oil, and seasoning to coat.

3. Bake sweet potato fries for 30 min or until fully cooked and starting to turn slightly brown.

4. Mince garlic and optional parsley. Add remaining butter to a small nonstick skillet and heat on medium heat until beginning to smoke. Add garlic and sauté until fragrant but NOT browned. Turn off the heat and stir in the fresh parsley.

5. When fries are done, drizzle with the garlic butter. Mix with tongs and serve.

Notes

Stephenie: Edited to mix the ingredients on the pan instead of dirtying a bowl. You can also cut the potatoes into discs to save time. Just make sure that they're identical thickness so they cook evenly. Ideally, use a mandolin.

Paleo: To make this paleo, use ghee or clarified butter. It works and tastes great, though it's creamer with butter.
